Yummy Blueberry Cake Recipe Featuring Wyman’s Wild Blueberries
Have you ever eaten wild blueberries? Not just any blueberry, but actual wild blueberries?
I didn’t always know there was a real difference between types of blueberries, but there is. Wild blueberries are low bush berries and are considered “wild” because they have never been planted and typically can’t be transplanted elsewhere. They are the real, original deal! This root system is native only to Maine, the Canadian Maritimes, and parts of Quebec, so that means many people have never actually tasted a wild blueberry while they’re in season. That’s a shame!
For everyone who has missed out, though, you’re in luck. Wyman’s of Maine is a family-owned wild blueberry grower and processor of all-natural frozen fruit. The company begain in 1874 and now has over 11,000 acres in Maine, Prince Edward Island, and New Brunswick, Canada.
Wyman’s quick freezes 10,000 acres (wow!) of wild blueberries within 24 hour hours of their harvest. This locks in the beautiful fresh fruit flavor and character of the berry, and keeps them tasting as fresh as the day they were picked. Blueberries are also known for their many health benefits, all of which are preserved in Wyman’s quick-freezing method. Quick-freezing also prevents the slow growth of ice crystals in the berries (goodbye, freezer burn!), and prevents them from getting mushy when they’re defrosted.
Wild blueberries pack a lot of punch, more so than their cultivated counterparts found alongside Wyman’s in the grocery store. Blueberries are number one in antioxidants among 40 other fruits and vegetables, and the smaller size of wild blueberries means less room for water and more room for nutrients. In other words, blueberries are fantastic and wild blueberries are even better! With so many delicious recipes out there (smoothies, cakes, pancakes, you name it), there’s no doubt you’ll find plenty of ways to use Wyman’s wild blueberries.

I mentioned earlier that there are a ton of amazing recipes for blueberries (including my blueberry buttermilk pancakes recipe), and today I’m excited to share this amazing recipe for Ellie’s Famous Blueberry Cake!
Ingredients
- 3⁄4 cups sugar
- 1⁄2 cup butter
- 1 egg
- 1⁄2 cup milk
- 2 cups flour
- 1⁄2 tsp salt
- 2 tsp baking powder
- 2 cups Wyman’s Frozen Wild Blueberries
- 1⁄2 cup sugar
- 1⁄3 cup flour
- 1⁄4 cup butter (softened)
- 1 teaspoon cinnamon
Instructions for Cake (first 8 ingredients)
- Preheat oven to 375° F.
- Cream sugar and butter together.
- Mix egg and milk.
- Sift dry ingredients together and add to cream mixture, alternating with the liquid.
- Fold in blueberries.
- Pour batter into a greased 9 x 9 inch pan. Spread topping over cake batter and bake for 30 to 40 minutes.
Instructions for Topping (last 4 ingredients)
- Sift sugar, flour, and cinnamon.
- Cut in butter until it forms lumps the size of peas.
- Spread on top of blueberry cake batter before baking.
Wyman’s has been my frozen blueberry brand of choice for years now, and if you ever see me shopping at BJ’s, you’ll probably notice a giant bag of them in my giant cart. (With my daily breakfast smoothie, a berry cereal I make for the kids, my favorite blueberry pancakes, and the occasional muffin/bread/dessert, I go through a lot of blueberries.) I grew up eating wild blueberries in Florida. It pains me to pay actual money for the tiny blueberries that show up in the store each summer. I’ll have to look for these.

I love blueberries! I have all the ingredients to make this recipe and I did want to make some type of dessert this week so thanks for sharing.
I have just put this into the oven… here are my comments: Why is there no vanilla in the recipe? Why isn’t the butter/sugar mixture loosened by beating in the egg? Do you realize how difficult it is to stir frozen berries into a stiff batter?? So frustrating!! Then trying to place the very stiff mixture into the pan… the color of course is purple from the juice of the berries…

Hi Ruthie! It’s a Wyman’s recipe, so I can’t say for sure why they chose those specific options, but I didn’t have any trouble when I made it, and I thought it turned out to be pretty yummy. (And the cake wasn’t blue except where the blueberries were.) I do you hope you enjoyed your cake!
Hey there Melanie Scott! I Just wanted you to know that wild blueberries are also found in BC Canada. They are very well integrated in the Bulkley Valley and I enjoyed them for many years up there. I do agree that they are superior to cultivated blueberries. I am looking forward to trying this recipe.
