Recipe: Strawberry Peanut Cashew Sun Butter Smoothie Featuring the Vitamix Personal Cup Adapter

We’re just three weeks into the school year, and I’m already way over school-day mornings. Getting the kids out of bed every day is no easy feat, and getting them to eat breakfast in a reasonable amount of time is even more difficult. Donuts anyone? Just kidding! I’m not wiling to sacrifice health or the development of sensible habits for a few extra minutes, and my kids aren’t very interested in starting the day with heavy foods anyway.
Back in June, I told you guys all about how my Vitamix is helping me prepare easy weeknight dinners, and that I planned to try using it to make my own nut butters. I’ve since discovered that with the Personal Cup Adapter, the Vitamix is just as handy for weekday mornings, and I’ve even managed to incorporate my new nut butter hobby into the situation.
Let’s start with the “butter”. It’s so simple to do, and you get to choose only exactly what ingredients you want. (Try making that happen at the supermarket.) We’ve experimented with different mixtures—partly because I want to have a variety of nutritional benefits and partly just because we could. Our very favorite is a blend of both nuts and seeds:
Peanut Cashew Sun Butter
Ingredients
1 Cup Peanuts
1 Cup Cashews
3/4 Cup Sunflower Seeds
Instructions
- Put all ingredients in the Vitamix container.
- Start on Variable 1, and slowly increase to the highest speed. Blend for 45 seconds, and then stop to scrape the sides of the container with the damper.
- Continue blending. Use the damper to push the ingredients toward the blades. Stop once you’ve reached your desired consistency.
That’s really all it takes. The key to successfully blending your own nut butter is to use the damper as instructed, so don’t be shy about it. You can obviously do all one nut or one seed, but I encourage you to try out different blends. It’s fun, and we’ve yet to come up with something that doesn’t work with jelly on a sandwich.
Back to breakfast. Lately, we’ve been enjoying our new favorite nut butter in yummy breakfast smoothie. It’s light yet satisfying, delicious, and it only takes a few minutes to make in the Vitamix with the Personal Cup Adapter.
Strawberry Peanut Cashew Sun Butter Breakfast Smoothie
Ingredients
1 1/2 Cups Frozen Strawberries
2 Tbsp Peanut Cashew Sun Butter
1/2 Tbsp Flax Chia Blend
1/4 Tsp Cinnamon
1/2 Tbsp Agave
1 Cup Milk
Instructions
- Add ingredients to the Vitamix Personal Cup in the order listed above.
- Select Variable 1.
- Turn machine on and slowly increase speed to the highest speed.
- Blend for 1 minute or until desired consistency is reached. Serve immediately.
This smoothie is packed with all kinds of vitamins and minerals as well as fiber and healthy fats. (Don’t believe me? Do an Internet search for nutritional info on sunflower seeds, cashews, peanuts, and flax.)
My daughter likes for me to pour it into a glass and add a pretty straw. For myself, I just pop on the included lid and drink right from the cup that I used to blend it. It’s never been easier to have a nutritious, on-the-go breakfast!
