Cranberry Date Buttermilk Muffins Recipe & Mealthy Handblend Giveaway
Our Christmas mornings follow what I am sure is a typical routine. Gifts are exchanged, a huge mess is made of the living room, we have a nice breakfast together, and then we head out to visit family for the day. It sounds nice and simple, but in reality, every step involves me doing too many things at once. To make the morning go as smoothly as possible, I like to prepare breakfast the day before. A lot of stress is relieved by doing it this way, but let’s be honest: the day before Christmas is pretty crazy too. Thus, I enthusiastically welcome anything that might save me a few minutes.
Muffins, always a hit for breakfast around here, are the perfect make-ahead meal, and the kids expect to eat them every Christmas. This year, I’m making an old recipe of mine, but I’m using a new tool: the Mealthy Handblend immersion blender. It’s the newest addition to Mealthy’s line of appliances, and it’s definitely making life easier for me.

The recipe I’m about to share calls for chopped nuts, so that’s the attachment I started with.
For pulsing action, press repeatedly on the power button, or hold it down for continuous chopping. My son refuses to eat muffins with nuts in them unless the nuts are very finely chopped, so I went ahead and hit the Turbo button. In mere seconds, I had perfectly chopped nuts that even my extremely picky son would approve of.
So much easier on the wrists! I will never chop nuts with a knife again.
The chopping went so well that I was very excited to try the next step: whisking. How did the Mealthy Handblend compare to the hand mixer I usually use? The results were surprising.
What you’re looking at there is perfection. The key to fluffy muffins and cakes is to beat the liquid until it’s super bubbly, and this immersion blender accomplished that in almost no time at all. Plus, it’s much lighter and easier to move around than my hand blender, so not only did it take less time, but it was less effort for me overall. Yes!
Before I give you my fabulous muffin recipe, let’s discuss some of the ingredients. First, I use half oat flour for it’s fiber content and cholesterol-reducing properties—and just because it’s generally healthier than regular flour. Buttermilk makes the muffins moist and fluffy. For this post, I used walnuts, but you can substitute chopped pecans if you like. Okay, I think that covers it. Here we go!
Cranberry Date Buttermilk Muffins
Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup oat flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 egg
- 1 cup buttermilk
- 1/3 cup canola oil
- 1 tsp vanilla
- 1/2 cup dried cranberries
- 1/2 cup date crumbles
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350 degrees.
- Mix together flours, salt, baking powder, and baking soda. Set aside.
- Whisk liquid ingredients with sugar until thoroughly mixed and there are lots of bubbles.
- Add dry ingredients to wet ingredients and mix until just combined.
- Fold in dried cranberries, date crumbles, and chopped walnuts.
- Divide batter evenly among greased or lined muffin cups.
- Bake for about 20 minutes.
It really is an easy recipe to make. The chopping and intense whisking were the most laborious parts of the process, but the Mealthy Handblend makes short work of it. By preparing these muffins ahead of time, you can have a yummy breakfast without missing any of the Christmas morning fun.

This would be so great to have instead of me using my big mixer all the time.
This is what we call a “zhuzher” in our home. My other half has a tendency to tear though my small appliances, regardless of quality. A welcome challenge.
