Chewy Sugar Cookies Recipe
As much as I enjoy baking, I’ve mostly avoided sugar cookies because I’ve been unhappy with every attempt I’ve made. Maybe I’m too picky, I don’t know, but they’re never soft and chewy enough for me or the flavor is all wrong. I’m perfectly content substituting them for other kinds of deliciousness like chocolate chip or oatmeal cookies, but my kids like shapes. So, I have to make shaped cookies, and this is most easily done with sugar cookies.
Determined to come up with a recipe for chewy sugar cookies that I would actually enjoy myself, I set to work researching and experimenting, and I have to say, I’m pretty happy with the outcome. They’re soft (but not too soft), chewy, and the flavor is just right. According to my husband, “They were the best sugar cookies I’ve ever had! And that’s no lie.”
With Easter coming up and spring finally starting to show its pretty face, I thought bunnies and butterflies would be appropriate shapes for this round of baking. I also chose the foot cookie cutter. Because I could. If I’d known I had one of those, I probably would have done this whole thing sooner.
- 1½ cups flour
- 1 cup sugar
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup butter
- 1 tsp vanilla
- 1 egg
- 1 tbsp milk
- Sift together the flour, baking powder, baking soda, sugar, and salt
- Combine with butter until mixture resembles cornmeal
- Beat together the egg, vanilla, and milk, and add to mixture
- On a floured surface and with a floured rolling pin, roll dough to about ¼ in. thickness
- Cut with a floured cookie cutter
- Place cut out cookies onto parchment paper lined cookie sheets, and bake at 375 degrees for 8 minutes
I was very generous with the flour during the cutting process without any adverse effects on the recipe. What I really love about making these is that I didn’t have to chill the dough at all, and they were still easy to cut. I’m all for eliminating extra steps.
You might want to decorate yours to make them prettier, but I never feel the need to have more sugar on my sugar cookies, and it’s not a habit I want my kids to develop. So, plain is what we go with, and they’re still fantastic. I hope you enjoy them!
