Apple Cinnamon Pecan Puffins Muffins Recipe
Since school started, things around here are insanely. Mornings are rushed, evenings are filled with after school activities and tons of homework, and weekends are chock-full of all the events and play-dates we can’t do on weekdays.
Needless to say, we’re tired. Sometimes this leads to sleeping a little later than we should, which leads to a morning with very little time to spare. I normally like to cook breakfast for my kids, but as you can see, sometimes that just isn’t an option. When that’s the case, cereal is my go-to choice, but I don’t want to feed them a cereal full of sugar and bad ingredients.
I turn to Barbara’s instead, because healthy eating doesn’t have to take a backseat on busy days.
Barbara’s has been one of my favorite brands for a long time; they have a variety of cereals, granola, and snacks that are delicious and wholesome. All Barbara’s products are made with high quality ingredients, without refined sugar and hydrogenated oils. Barbara’s foods are also certified non-GMO.
We particularly love the Puffins cereals. I hate cereals that are super crunchy (I’ve actually cut my gums on hard cereal), so I’m a big fan of the “softer” crunch of Puffins. This cereal is also lightly sweetened with molasses, which gives them delicious flavor without being loaded with sugar. Barbara’s Puffins come in fun flavors like Peanut Butter, Honey Rice, Multigrain, Cinnamon, Peanut Butter and Chocolate, and, of course, the Original flavor. There are also seasonal Puffins, like Pumpkin!
Puffins are perfect as a quick and easy cereal, but you can also cook with them. Barbara’s website has loads of recipes to help you make the most of your Puffins; our favorites are the Puffin Crusted French Toast and Puffins Muffins.
We recently whipped up a batch of muffins inspired by their Apple Honey Puffins Muffins, and they were every bit as delicious as I expected! Have a look at the recipe:
- 1 egg
- ¼ cup canola oil
- ½ cup milk
- ¼ cup honey
- 1 cup Bob's Red Mill Organic Whole Wheat Pastry Flour
- ¼ cup packed brown sugar
- 3 tsp baking powder
- 1 tsp sea salt
- ¼ tsp cinnamon
- ½ cup chopped pecans
- 2 cups crushed Barbara's Bakery Cinnamon Puffins Cereal
- 1 medium apple, shredded
- Preheat oven to 375 degrees and prep a 12-cup (or two 6-cup) muffin pan(s).
- Mix together dry ingredients (flour, brown sugar, salt, cinnamon, cereal, and pecans).
- Beat liquid ingredients together (egg, milk, oil, honey).
- Add wet ingredients to dry ingredients and mix until just moist.
- Fold shredded apple into batter.
- Divide batter evenly among muffin cups.
- Cook for 15 to 20 minutes or until toothpick inserted comes out clean.
The original recipe looks great as-is, but I made a few changes. Instead of using spelt flour, I used Bob’s Red Mill Organic Whole Wheat Pastry Flour, and I also added some finely crushed pecans to the mix. I swapped olive oil for organic canola oil and the Honey Rice Puffins for the Cinnamon Puffins. These Apple Cinnamon Pecan Muffins are moist, protein-packed, and satisfying. The whole family loved them, and they are a perfect way to make any breakfast a little more hearty and fast. I’m not speaking from experience, because we gobbled these up too quickly to save them for breakfast, but I’m making a new batch very soon!

Those muffins sound yummy! My family loves anything with apples!
Barbara’s would be great for the week-ends as my grandchildren stay over. My daughter is very intelligent as to what the kiddos should and should not eat. I on the other hand grew up old school, if the grandchildren want it – they get it Barbara’s would please her and them especially the muffins.
